We made our first of what we hope will be many vegetable donations to a food pantry, and are proud supporters of the Grow a Row program organized by Cornell Cooperative Extension in Schoharie and Otsego Counties.
Grow a Row is a new community-driven initiative that encourages gardeners to share extra vegetables and fruits to local food pantries and hunger relief organizations. By donating some of our harvest, we are helping to combat food insecurity and increase local access to healthy food.
In addition to our produce donations through Grow a Row, we will offer deals at the Delhi Farm Market on Wednesdays, bundling free vegetables with pork purchases at our farm stand. Every summer, we grow extra zucchini to share with customers.
We always enjoy the conversations at the farm market about how to eat an abundance of zucchini. Our favorite recipe on the farm is zucchini bread.
Recipe for Zucchini Bread
Mix the following ingredients:
3 eggs
1 cup canola oil
2 cups sugar
2 cups peeled and grated zucchini
2 cups flour
2 teaspoon vanilla
2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 cup chopped walnuts (optional)
Bake at 350 degrees Fahrenheit for one hour in a greased bundt pan.
